Modern classic. A perfect marriage of japanese umami flavors and french technique. This winter menu showcased a subtle flavors with a precise cooking method. French wine pairing was beautifully executed thanks to Fujita-san, the sommelier. Wines were carefully chosen and the quality were excellent. Who would have thought that you could pair a Daikon with La Pousse d'Or Volnay 1er cru? Superb.

In a cozy afternoon enjoyed a wonderful lunch. Started with selected champagne followed by a series of eye-catching dishes combining seafood with strong citrus scent and strong French style. The Ise-Ebi is so tender that I can’t forget how it amazed me. Above average Michelin 2 star.

So glad we saved the best till last on our final night in Tokyo! Firstly the Hotel Manager was first class. We are big foodies and he is definitely the best and nicest we have come across anywhere in the world. The food was not only beautiful to look at but we really had some fabulous taste sensations. Such delicate flavours and combinations. Who would have thought bamboo shoots roasted would be so good! Celery in a dessert- yes please! Just wow! We had matching wines and the sommelier was informative and we appreciated him showing us the bottle and pouring them at the table. I can see why this has two Michelin stars. Will certainly be recommending to anyone we know passing through Tokyo.

One of my favorite restaurant in Ginza, third time and always amazed by the creativity in the plate, it will blow your mind and eyes even though you are used by going in Michelin stars restaurant. 2 stars currently, but 3 stars should be soon or already given in my point of view. Wakabayashi san and Shuhei san, bring you in real wines pairing’s world. I deeply recommend to ask for pairing course. Won’t regret it. You will also meet Lionel, a gentleman with kind and humor sense, he will make you feel at home with great service.
