Very good kaiseki cuisine! Strong sense of contrast in every dish, from crispy to soft and sweet to sour, warm to cool. Highlights for me were the uni jelly starter, the mochikome with hamo (although the mochikome was the big one here), choice of the Bourgogne wine with the duck, and the caramelized skin on top of the kinki fish. 🐟 Oh also the gelato was incredible, many dimensions to it like the almond liquor on top, to the just-about-to-melt temperature, crisp of the meringue, ume jam at the bottom. 🍨Eurgh. So good. Very expensive but worth it if you appreciate fine cuisine. Went with the infamous kaixi.
Yamazaki 山﨑 is a Japanese kaiseki restaurant in Tokyo that has achieved 1 Michelin star ⭐️ just 3 months after opening in August 2018. The restaurant has an omakase menu with a price of ¥44,000 including tax. Since my mom and I chose to pair it with wine and sake, it would be ¥56,386 per person. Although the cuisine at Yamazaki is based on traditional Japanese cuisine, the freedom to go beyond the boundaries of Japanese cuisine is what makes this restaurant more appealing. There is no hassun or sashimi, Yamazaki’s specialty is a charcoal–grilled soft-shell turtle with a rich umami flavor. The soup is made with carefully brewed dashi stock and the claypot rice is skillfully wrapped in toppings. All the dishes have a delicate flavor, making the most of the natural flavor of the ingredients. The ability to change the flavor from light to strong, light to heavy is also something extremely amazing when enjoying the food here. The dishes are more impressive than you can imagine, with the purpose of not only captivating the eyes but also the taste buds of diners. Inside the attractive shape of the dish is the abundance of original flavors and umami of the ingredients that Chef Yamazaki has carefully extracted and processed. The only downside of this restaurant is that you can only make a reservation once a year, which means you cannot make a second reservation in the same year but can only wait until the following year to enjoy it again. ¥56,386 / 1 person ~ 9 million VND (US$355)
Fantastic place to enjoy one of the best sushi in town! We had some sushi the prior days at zanmai and the Roku Roku at Grand Hyatt but this place beat them both! Fairly priced (2000¥ for a 7 pieces tuna plate) and 5000¥ for some mixed sushi (15 pieces)! Its a bit long to get there but its really worthwile!
Sushi for breakfast. After watching the tuna auction in Toyosu Fish Market. The sushi is not only fresh but very well prepared and tasty.
