Sushi was incredible! Delicious every bite. The fish would melt in your mouth and it was extremely tasty and very well balanced. We did reservation online quite a while ago and the experience was really amazing. Dinner lasted for approx 1.5 hours which is on, but every bit was amazing
Wonderful omakase (i.e. course menu in which the chef decides the dishes) experience. Excellent quality of ingredients and superlative kindness from the chef and the service. While other type of dishes can also be served as part of the menu, the specialty are nigiris.
Chef Michinobu Mizukami, disciple of Sukiyabashi Jiro, opened this Tokyo knock-out 4-5 years ago. We were so blessed to have been seated at this absolute gem. The sushi with appetizer meal was a masterpiece of sushi and cooked dishes in omakase fashion, approximately $350 USD per person. Each piece of the restaurant was distinctly part of a greater whole. From the handcrafted metal chopstick rests to the selection of plates to of course the delicate balance of dishes. I cannot say enough that this was an experience that eclipsed all of our previous culinary perspectives. Our world was changed. The photographs and my words cannot do it justice. If you are visiting Tokyo, the hotel concierge can assist in making a reservation in this quaint 9 seat restaurant with 2 seatings: 17:30 and 19:30. I included their business card QR code, which could assist in reservations. Attire is business casual, although I got by with a short sleeve polo shirt and jeans/sneakers. The vibe here is not snooty nor militant. Happy banter and judgement-free zone for sure. The strict rules are no perfumes nor heavy fragrances. Also no open toe shoes. The sushi style uses the signature Jiro rice with bold vinegar served still slightly warm. The uni is the best I've ever had. Some of the real memorable pieces include the seared rock shrimp and smoked swordfish. Fantastic service. A real warm and welcoming environment. Would 100% recommend.

Therefore, it can be said that Mizukami Oyakata has carried on the techniques of Sukiyabashi Jiro. The features of Sushi Mizukami Sushi Mizukami is located in Hanzomon area which is closed to Imperial Palace and British Embassy. Hence, its interior and atmosphere are quite sophisticated. The customers are also. As I mentioned above, Mizukami Oyakata has carried on the techniques of Sukiyabashi Jiro, however he makes adjustments to traditional work, and succeeds at differentiating from other sushi chefs from Jiro. His nigiri re-finds us the importance of shari in regards to sushi. A balance of shari and tane (cooked sushi fish) is remarkable and each sushi has a great presence. The shari (sushi rice) of Sushi Mizukami The hardness of rice: medium The temperature of shari: just right Saltiness: slightly strong Sourness: strong Sweetness: slightly strong (just pure sweetness from rice) Cost: It costs more than JPY20,000, but the course is included almost 20 pieces of sushi and the quality of each sushi fishes is high quality, so it is appropriate.
