Great concept and excellent execution. This is not your ‘usual’ fine dining place, if you are used to everything following a rigid schedule and service style. The mushroom main course is out of the world. So is the gluten free bread! One of the best I have had! We sat at the counter looking over our chef Rachel who has been so wonderful in preparing and explaining the dishes to us. Great service from everyone at the restaurant including our waitress Gabi.
My wife and I had the pleasure of dining here tonight and everything about our experience was amazing and enlightening. The work they’re doing here to promote sustainability and reducing food waste is not only important, but executed to perfection in their dishes. Each bite elevates the concept of “zero food waste” from a potential gimmick in lesser hands, to nothing short of flavor nirvana. A dish as simple and straightforward as “tomatoes with ricotta” messed with my mind by playing tricks on my palette using dashi broth and hemp seed ricotta to interplay fish undertones with peanut butter fattiness and beautiful vegetal tomatoes. The pumpkin seed and fig leaf mole served with charred oyster mushrooms dances on the tongue with sweetness and spice. The care and passion each staff member shows as they explain the concept of each dish shows in the flavors and cooking. The restaurant decor and ambience is refined and beautiful. Silo and its team are doing some really incredible things that will no doubt receive increasing recognition and appreciation as time progresses and as sustainability moves to the forefront of humanitarian causes and concerns.

Excellent all around. The service is attentive without being obsequious. The food is high-quality, beautifully plated, and the menu features both more creative fare as well as hearty classic dishes. One of our best memories of a birthday trip to Belgium.
