We both tried the tasting menu and we both were very happy with it...After reading reviews before hand we decided to start with the habanero cream... It was just spicy enough and served in a bread bowl that we really liked...Yes the portions are small on the tasting menu however the dishes had so many levels of texture and flavor that I couldn't wait for the next plate...if I had any complaint I did not like the decor way to dark and terribly uncomfortable chairs.
The service here was excellent, there was always a waiter ready to attend us. The food was really good as well. We were treated with some delicious bite sized pies es before even ordering. Then started with the ibérico pork ham with some tomato bread. Next we had a crunchy, spicy roll. Both ceviches were delicious, though I leaned more towards the lubina with tiger milk. We ordered some tostadas and tacos which were delicious and they also had some really nice sauces. Lastly we had some fried calamari which had a very colorful and tangy sauce which I loved. All that accompanied with some Parmesan fries.
Location - in an upscale outdoor mall, next to JW Marriott , easy to find Ambience- elegant , upscale, very comfortable. Love the blue sofa like chairs in the indoor dining room Service - friendly, efficient, professional The food - top notched . The crema habenera was simple divine - a slightly creamy slick soup in a delicious bread bowl . The duck tacos were super delicious as well . For main , my partner and I shared the rib eye steak . We ordered it medium rare , and it came out perfect . The meat was seasoned perfectly, and it came out medium rare just like we ordered it . Equally (if not more ) delicious was the grilled vegetable dish - possibly the best grilled veg dish I’ve ever had . I highly recommend Sibau for fine dining …
