Overall, it was quite good, though expectations might have been a bit too high for the restaurant recommended by the guide. The "perfect egg" was a pleasant surprise, but some of the other dishes lacked a bit of distinction. The quality was generally good, and the portions were hearty (though some dishes, like the duck, were a bit too greasy for my taste).
Incredible taste! We have got lunch menu and everyone tried different things. Best duck we have ever eaten before elsewhere in the world. The host gave us a great advice on wine and we felt zero regrets about following it. Fruity Corsican wine married so well with our lunch. Absolute recommendation! For desert I had pavlova cake, really liked it as well!
Outstanding new bistronomic dinner option in the Marais. Dishes packed with flavor and originality. Very confident chef who knows how far to push ingredients and make all the parts of the plate play well together. A smoked eel and asparagus starter was exciting and irresistible. A plate of thinly sliced rare roast bits tossed with aggressively dressed perfect arugula and with garlicy croutons was meant to evoke a a rare roast beef sandwich, and as unlikely as it sounds, worked well for a starter. We fought over the deeply flavored rascasse served with exquisite coco beans and fresh herbs and its equally excellent companion main, the kitchen's signature pork belly. We were very well fed, but managed to split a riz au lait to finish. Good, reasonable wine list; good service; pleasant low key ambience. Mostly French in the dining room on our night. The dinner menu of three courses at 45€ is a bargain in the current Paris scene. Recommended, will certainly return.
I discovered Bombance by chance one day while walking around the Marais, and I was excited to give it a try. Unfortunately, my experience disappointed. The service wasn’t the best. This restaurant is clearly popular and it was very busy. I was a party of one and was left unattended for quite some time. There were two servers, one would often take my order only to have the other come to me and ask to take my order again. Seemed to be a lot of miscommunication between the two of them or they weren’t communicating to one another at all. I had made the reservation days in advance, and where did they seat me, which was in view of their wine fridge against a white wall. The irony was that I sat there staring at my empty wine glass while my meal came to me before my ordered pairing. The food lacked confidence and consistency in flavors. I ordered the poached egg and mushrooms. It was good, but needed more chives or acid to make it better. Bread came with the dish, why didn’t I get bread when seated…I did wait a while for my starter. Just bring out the bread with some butter would have been nice. Or maybe a small bite to welcome me while having my aperitif? I opted out of trying their signature dish, the sweetbreads. My stomach just doesn’t enjoy them, so I went for the Brill fish. While the dish looked absolutely stunning, it had a big bone or cartilage on the first bite-I had to spit it out. The dish had good flavor especially with the pickled beets and radishes, but I think the chef could elevate this dish with Himalayan salt shavings on top of the fish. My favorite dish was the blue cheese, which is says enough about what I thought of the prepared meals. It was creamy and went well with the bread. Finally, I had the clementine and pistachio dessert, which was delicious, but it was placed on more bread when it doesn’t need the bread at all. I would skip Bombance, unless you love sweetbreads, then maybe your experience will be better.
